A new French bistro in Piermont.
The partners, Alain Eigenman and Daout Celestin, have been longtime friends. In fact, they met 22 years ago while working at Raoul’s in Nyack (bonus points if someone still has a menu from that great place!) and were best men in each other’s weddings.
The menu has French bistro fare, including lots of salads, organic chicken, rack of lamb and rib eye with frites. “Simple but elegant food,” says Alain. “We’re trying to stay away from butter and cream.”
They’re considering a rotisserie for the kitchen, but that’s not a for-sure.
The restaurant is open from 11 a.m. to 11 p.m. daily. There is a big mahogany bar where people can dine, as well as seats inside, on the sidewalk and on the back patio.
They’re calling the restaurant a bistro, but it is more like a brasserie, he says, with big mirrors in frames and lots of beers on tap. Signature dishes he brings from seven years as executive chef at Provence in Manhattan are bouillaibasse and rack of lamb with tomato confit.
Alain also cooked at Raoul’s in Nyack and worked for Claude Bail at the Ho Ho Kus Inn in New Jersey before opening his own place, Alain’s Bistro in Norwood, N.J.
“It’s good timing,” he says about opening Sidewalk Bistro. “This area needs something and we’re going to bring it.”
Of course the timing is still emotional for Daout, who was at Xaviars at Piermont for 18 years. “There were a lot of good memories in that room,” he says. “I even met my wife in that room!”
